Apparently you use the Nunchuk to steer the plane and the Wiimote acts as a throttle.

That's the only manageable Wii remote control scheme for any kind of 3rd person vehicle game, so I'm glad they implemented that (No, I'm not going to use the Wii remote to play Mario Kart Wii. That's what Gamecube controllers were made for).
